Chocolate + Sea Salt Nut Cups

{Chocolate + Sea Salt Nut Cups}

Filling:

¼ cup of Almond Butter, raw + organic
½ cup of Sunflower Butter
1 ½ tsp of Pure Vanilla
2 tbsp of Honey, raw + organic
¼ cup of Coconut Oil, cold-pressed + extra virgin + organic
1/3 cup of Almonds, chopped + raw

Chocolate Layer:

¾ cup of Cocoa Powder, organic
1 cup of Coconut Oil, cold-pressed + extra virgin + organic
¼ cup of Honey, raw + organic
1 tbsp of Pure Vanilla
Sea Salt

 Let’s start with the filling. Place the coconut oil and honey in a small glass bowl and place in the oven to melt. Mix the rest of the filling ingredients and then add the liquid oil and honey until smooth. In another small bowl or measuring glass, combine the chocolate layer ingredients and place in a pot of simmering water.  The heat from the water will slowly melt the mixture until it’s completely liquefied. Mix continuously to keep the oil and honey from separating.

 Cut parchment paper into small squares to use as your cup holders. Place into the muffin tins and pour a thin layer of the chocolate mixture. Place in the freezer.  Once they are solid, scoop a layer of filling on top of the chocolate layer and place back in the freezer.  After they harden, cover the filling with the remaining chocolate to the level you prefer and sprinkle with sea salt.  Return the tins to the freezer. Pull out in 20 minutes and enjoy! Please keep these delicious treats in the freezer or else they will melt on you!
