Goji + Sea Salt Cocoa Fudge

The lovely month of March is simply my favorite, for selfish reasons of course. The twenty third of the month finds me celebrating an annual birthday, mine to be exact.  My love of birthdays is quite strong.  I have been known to make dramatic exclamations regarding the necessity of birthday months, which to this day my Love finds hilarious.  Yet, every year I press on in pursuit of friends and family that will celebrate with me all month long.  I can't help it.  It's such a wonderful reason to gather and savor dear friends, recall past adventures, analyze character growth through out the years and simply spend time with those you love most.  I cherish celebration.

This year's March began beautifully with a gathering, much like the ones I long for each year.  This memorable evening with my closest of friends filled my heart and rejuvenated my soul.  The sweet dinner and dessert that accompanied this time became my inspiration for the recipe I share with you today.

My dear sweet second momma, the lovely Alisa of Simply Real Foods, treated us to a delicious homemade chocolate and sparked a desire in me to create my own chocolate treat. A few days later, after whipping together old favorites and playing with new ingredients, I discovered a lovely new recipe!  The result… a smooth and slightly addictive chocolate fudge. To say the least, I am in love.  Not only is it divinely delicious, but the vibrancy of this dessert will brighten even the dreariest of days. And thankfully, this rich creamy fudge is composed of many nutritious ingredients! It is a beautiful truth that I will savor with every bite.  A visual inspiration and a playground for my tastebuds, I look forward to ending my evening meals with this lovely treat.

{Goji + Sea Salt Cocoa Fudge}

1 cup Coconut Oil, organic,  extra virgin + cold-pressed
1 cup Real Maple Syrup or Honey, organic + raw
2 tbsp Vanilla
1/2 cup Almond Butter, raw + crunchy

1 cup Cocoa or Carob Powder, unsweetened + raw (if possible)
1/2 tsp Cinnamon
1/4 - 1/2 tsp Sea Salt, to taste

Sea Salt
Goji Berries, organic + dried

Combine all the wet ingredients in a medium to large sauce pot heating on medium-low. Add in the dry and whisk quickly until smooth.  Pour fudge onto a large baking sheet, preferably with a lip, lined with parchment or wax paper.  Spread with a spatula until the fudge is an even 1/4 - 1/2 inch thick all around. Sprinkle the dessert with your goji berries and sea salt to finish.  Place in the freezer to set.

My dear friends, the lovely reality of this dessert... fifteen minutes of your time and you will have sweet hot fudge, ready to pour and set.  Patiently wait another thirty to forty five and you will have a beautiful dessert awaiting you in the freezer.  Whether you choose to taste alone or with friends, you will savor every morsel.  I promise.  Enjoy!
