A Day of Rest


There are times in life when one must simply stop.  I don't believe we've learned how to stay still.  Even when we are quiet, our minds run, never giving us a moment of nothing.

Once a month I have a wonderful gift,  a promised day or two of forced rest.  It began as a doctor's order to cleanse my gallbladder and liver.  Doesn't that sound like fun? But, now, I look forward to it.  It seems I require a reason for resting. It gives me the stoutness of heart to follow through and to silence the nagging of get back to work.

Today was my day in April.  It was a dreary and cozy one, truly perfect for staying indoors.  With only the sound of the wind against the window panes, it was quiet and peaceful.  Everything becomes simple and basic on these days.  Meals, once I can have them, are nourishing and small.  Light and easy is my motto.  A warm and flavorful chicken broth paired with grain-free toast slathered in rich creamy ghee and salted perfectly with my favorite pink salt was my delicious treat this afternoon. You may laugh, but it was exactly what I wished for in the moment.

As my day came to a close and the reality of tomorrow sunk in, I wondered at the pace we all seem to keep.  The lists in our minds that we are continually attempting to check-off, appointments, work every day, maintenance of all our belongings, creative projects, relationships with friends and family... it truly does not stop. Unless, we choose to close the door and let it all go. It's difficult, but so worth it.

I encourage you to try taking your own day of rest this month.  Find a place of quiet comfort and focus on the simple things of life.  Breathe.

Blueberry + Peach Pie


Sunshine streams through the windows, the birds sing their sweet songs and I find myself slowly relaxing.  Breathing in the fresh crisp air, my heartbeat steadies.  It's finally here. The loveliness of spring has arrived.

Truly my favorite season of the year, I'd like to say that I wait patiently spring, but that would be a falsehood. As soon as March arrives and little wisps of spring show themselves, I am on the edge of my seat ready to leap up and celebrate its arrival.

With this year came many new adventures for my Love and I.  Adventures that challenged the simplicity with which I prefer to live. I have never been skilled in the art of prioritizing and have found that reducing my involvements allows me to honor the dear people and value the commitments I've incorporated into my life.  Yet, this past winter I felt the Lord encouraging me to take a new journey.  I found it far more challenging than I anticipated.  My ability to keep life in order began to sink.  It's remarkable how easily this occurs. Floating in a blur of exhaustion and inner voices proclaiming failure, I finally took head of the Spirit's voice and acknowledged my attempts to survive and succeed on my own.  The weight lifted, and once again I was reminded of the many moments in my life He has gently called me back to His way. Since that sweet moment, He has graciously reminded me of His daily direction and provision of energy, clarity of mind and sweet peace. 

Simplicity is still my preference, but with Jesus as my guide I can journey through these new adventures with a refreshed spirit and ease of heart.  I can take the time to celebrate the beauty found in the lovely season  of spring around me. 

Cherishing the creativity of His lovely fruit this morning I was inspired to create a delicious pie with these sweet blueberries and peaches.  Pie seems to carry with it nostalgic and sweet emotions. I find it brings me thoughts of lovely little grandmas, bright spring days and picnics. So silly, but it's what I think of almost every time. What memories and thoughts do pies bring you?


{Blueberry + Peach Pie}

Golden Flaky Crust
           ~adapted from Flying Apron's GF + Vegan Baking Book

3 cups Brown Rice Flour
1/2 tsp Sea Salt
1 1/2 cups Palm Oil
1/4 cup + 2 tbsp Organic Madhava Agave or Pure Maple Syrup
2 tbsp Cold Water

Fruit Filling

4 Fresh Ripe Organic Peaches, sliced
3 cups Fresh Organic Blueberries
1 tbsp Pure Vanilla
1/4 cup Pure Maple Syrup
2 tbsp Arrowroot

Begin by preheating the oven to 350 degrees. In a glass bowl combine the flour and salt. Place the palm oil in a bowl with a standing mixture, paddle attachment advised.  Whip the palm oil until soft and then slowly add in the flour mixture. Carefully pour in your liquids until a soft dough has formed.  If the dough is dry add additional tablespoons of cold water, one at a time. Divide the dough in half and set one aside.  Take one and place it in your pie pan.  Dust your hands with rice flour and gently work the dough toward the pan edges until it fills the pan. Place pan in the oven to par-bake for 8 to 10 minutes.  While the bottom crust is baking, cut a sheet of parchment paper for your base to roll the top crust dough.  Sprinkle the parchment, your hands and the dough with rice flour, then roll out the dough on it, forming  a 11-12 inch disc. Set aside. Pull out your bottom crust and let it cool.  Now, to create your filling place the fruit in a large glass bowl and slowly add the remaining ingredients in the order listed.  Stir well with a wooden spoon, then pour into the par-baked bottom crust and arrange evenly.


Gently lift the rolled top crust and flip over onto the prepared pie.  Delicately mold the edges, so that the fruit is completely enclosed.  Dust with cinnamon for a finishing touch and place in the oven for 50 to 60 minutes.  If the top begins to darken too quickly, move the pan to the bottom rack and lower the temperature to 350 degrees. When finished pull it out and let it cool for 15 minutes.  Pull out a serving knife and give it a try!  I hope you allow this refreshing combination of blueberry and peach to liven up your day, as it has mine. May this season of spring bring you joy in the little beauties it blooms.  Wishing you well dear friends!


Refreshing Cranberry Spritzer


       Happy April to all you lovely foodies! It's been a busy birthday month for me, full of surprises and adventures.  Amidst celebrating my 25th year I started up a business with a dear friend. Yes, I started a business.  I know....it's a big decision.  Fortunately, I am blessed to have a brilliant, hilarious and feisty partner to keep me going when I poop or wimp out.  It's rather handy. Thank goodness for sturdy souls like her!

It's through the busy seasons of life, like now, that I find it difficult to get creative with food and drink.  I  go into survival mode and forget to make time to eat well.  Can you relate? During these times I try to add simple -slightly creative- splashes to my ho-hum snacks and meals. Today, it was a little twist on my standard hydration approach. I love my water.  I will always advocate drinking loads and loads of this natural elixir, but occasionally it's fun to sip other tasty liquids like kombucha, aloe vera juice, coconut water and straight, raw cranberry juice.

This afternoon, it was the cranberry juice that captured my fancy. With a tart lip-puckering and refreshing flavor, the pure cranberry was the perfect match for my sunny day.  I decided to add a little lime-infused sparkling water for some bubble and a few squirts of stevia to soften the dramatic
tart pucker. 


{Cranberry Spritzer}

1 1/2 cup 100% Pure Organic Cranberry Juice

1/2 cup Lime-Infused Sparkling Water
1-2 Droppers Full of Natural, Pure, Liquid Stevia
Cute Mason Jar + Quirky Straw

I received a little treat in the mail -my Anthropologie magazine- that paired perfectly with my spritzer. Browsing this lovely magazine, I sipped  my way through each page.  I love the creative found in fashion and design.  It's enough to motivate me to pursue my own little artistic adventures. Today, it seems all I needed was Anthro's eclectic approach to fashion and a glass of cranberry bubbly to find inspiration.
