Honey Roasted Carrots

The smell of fall is in the air. WIth a cool breeze whipping through my windows, I am reminded of the loveliness of this season.  Soft ladylike sweaters, cozy blankets, steaming honey lavender tea, the weight of down comforters as I sleep, warm roasted root vegetables, the smell of sweet baked goods wafting from the oven....

Traditions arise and form from one's deep appreciation of a moment, a feeling, an atmosphere.  Hoping to bottle up and preserve the joy of the companions or the peaceful contentment of the situation, we reenact it all to a tee, year after year.  I have found that my dearest traditions are simple and personal, hidden in a way that typically allows just me or at times myself and one other to enjoy and savor. I am as loyal to these as most Americans are to their larger family traditions.  Fall is the season of traditions in my heart. Honoring my little treasured moments here and there make this time a precious one. One that I look forward to every year. And now it has come. 

As we move slowly and beautifully into this brisk and fresh season, I encourage you to seek out and honor your own little traditions.  Share them with your loved ones or cherish them by yourself.  Make a point to stop and enjoy your life in this time.  Savor it.  You will only have this moment once. 

{Roasted Cinnamon Carrots}

Prep Time: 5 min
Makes: 4-5 cups

1lb of Fresh Carrots, washed + chopped, organic
3 Tbsp Coconut Oil, slightly warmed, 
organic, extra virgin, cold pressed

3 Tbsp Honey, slightly warmed, organic + raw
1-1.5 tsp of Cinnamon
1-1.5 tsp of Rosemary, fresh
Himalayan Sea Salt, to taste
Black Cracked Pepper, to taste

Warm oven to 375 degrees and toss carrots into a large bowl. Pour the liquid coconut oil and honey onto the carrots and toss. Add the spices and herbs, sprinkling more if you wish. Pour into a baking pan and spread evenly. Place in the oven and roast for 40 to 45 minutes.

I encourage you to try this while you are cleaning or working at home. These easy vegetables refrigerate well and can be quickly reheated as a tasty side dish for dinner. Enjoy!
