Bacon + Onion Sweet Biscuits



Biscuits... who doesn't love this simple treat? Comfort food hits a sweet spot in us all.  I thought these warm treats would be out of my life for a long time. Thankfully, I found a marvelous combination of ingredients that create a delicious grain and gluten-free biscuit!

The flavor, texture and versatility of this simple recipe has stolen my heart. I cannot get over the moist honey-buttery flavor in every bite. Once you try it, you'll understand my obsession.  Bake the biscuits without any additions, like bacon or onions, and you'll have a sweet and delicious goodie for breakfast or add savory flavors to pair it with a luncheon or dinner entrée, you decide! Today, I chose to share a sweet and savory biscuit with you.  They are divine...and yes, I have already eaten two today.  Trying to keep it from becoming three... So turn on those ovens and whip this little recipe together.  It'll take you 35 minutes at most and it's so worth it! 



{Bacon + Onion Sweet Biscuits}

2 1/2 cups Almond Meal
1/2 tsp Sea Salt, Himalayan (preferred)
1/2 tsp Baking Soda, gluten-free
1/4 cup + 1-2 tsp (for sautéing) Coconut Oil, organic, extra virgin + cold-pressed 
1/4 cup Honey, raw + organic
2 Eggs, organic + free-range
Squeeze of fresh Meyer Lemon, organic
4 slices Cooked Bacon, organic, nitrate-free + antibiotic-free (preferred)
1/2 medium Onion, organic

Begin by warming up your oven to 350 degrees.  Mix the dry ingredients in a large glass bowl and then the liquid in another glass bowl. Add the liquid mixture (except for the 1-2 tsp of Coconut Oil) to the dry. Stir with a wooden spoon until smooth. Chop your cooked bacon and raw onion into bite-size chunks. Sauté the onion in a teaspoon or two of coconut oil, until browned and soft. Add the onion and bacon into the batter and mix evenly. Using a wet tablespoon, drop heaping spoonfuls of dough onto your oiled baking sheet. Depending on your preferred size of biscuit, you should have around a dozen. Bake at 350 for 15-20 minutes or until they turn a lovely golden brown.  Pull them out and allow to cool. Pair with your dinner entrée or enjoy as a hearty afternoon snack.  You’ll love them any time!
